Project #13

Taco soup.

SO yummy and the left overs taste even better!

Recipe improvised... this is my version cause i am quirky and can't help changing ingredients to my own liking.

Ingredients
1 pound ground beef or turkey
2 garlic cloves
1 diced onion
1 can white beans, drained and rinsed
1 can black beans, drained and rinsed
1 to 2 cups Trader Joe's Frozen Roasted Corn
2 cans diced tomatoes with green peppers
1 small can diced green chiles
1 package taco seasoning mix
1 package ranch salad dressing mix
*optional - cup of beef broth or low sodium chicken broth
corn chips, for serving
grated cheese, for garnish
cilantro, for garnish
Diced avocado for garnish

Brown Meat in large pot over medium heat with onions and garlic.
add all other ingredients, cover and simmer for about 30 minutes.

Top with cheese, cilantro and avocado or your favorite taco condiments.

* i like to add the chicken broth so it's a bit more soupy. You can add more or less to your liking.
Depending on my mood i have been known to add a tsp. chili powder and garlic powder.

Yummy soup! I can't really handle meat at the moment (stupid pregnancy food aversions), but I'm totally going to make this when I'm a regular food eating person.

And hey! So glad to have found your blog! I didn't even know you were here, and it looks like you've been here for ages. Happiness.
